There are ways to find out what the enemy built (radio intercept) but it sounds like you are talking about expert AI more than pvp. Ofc you can say now yea thats normal or common tactic to do it this way or that way but if you go completly unconventional and try out totally different build all the time and all the time enemy build and sends counter before your units even where spotted since they just started to move out of homebase or w/e for me that the enemy player knows where my units are going and knows what kind of unit i have and simply counters 'em.
